Take A Tip From The Professionals
Mini toffee apples, sweet but low fat, combining the goodness of fruit with a sweet treat.
Take four to six apples, cut out pieces of the fruit with a melon baller and squeeze lemon juice on them to prevent them from going brown. Attach them to skewers or ice-lolly sticks. To make the toffee sauce, use about 8oz of sugar and 4fl oz of water and boil until the toffee thickens. Leave to cool slightly and then dip each apple piece in the toffee and leave on parchment paper on a baking tray to set.
Mexican health drink.
Prepare fresh orange juice. Add a handful of baby spinach leaves and a small bunch of flat-leaf parsley. Put in a blender, discard most of the froth before serving.
Baked aubergine parcels.
Cut an aubergine in half lengthways and score the surface with a knife. Sprinkle with olive oil and squeeze several slivers of garlic into the cuts. Wrap in foil and bake on a medium heat for around 30 to 40 minutes. Cool and scoop out the flesh and discard the skin. Chop up the aubergine and set aside. Make a parcel by using strips (2in-3in long) of white daikon radish soaked in a small amount of sugar and vinegar until they soften. Lay the strips in a cross formation, put a small amount of the aubergine mix in the centre, fold the radish flaps over and serve. If you can't find daikon radish, use carrot or other vegetables.
Carrot dip.
Grate some fresh firm carrots and add some lime juice, a dash of hot paprika powder to taste and salad cookbook a pinch of sugar. Serve with pitta bread, crackers or bread.
You can serve the odd flan or quiche, but do so sparingly and cut them into slivers. Try Crotin goat's cheese and chestnut tart by John Paul McLachlan, head chef of the Macdonald Marine Hotel, North Berwick. Blind bake the pastry, then crumble a Crotin goat's cheese in with a handful of roasted, shelled chestnuts, whole or halved. Mix half a pint of double cream, three eggs and cranberry jello salad recipe a tablespoon of chopped chives together and pour over. Bake for 15 to 20 minutes at 170F. Serve with rocket, fresh cranberries and apple salad.
Make some hot dishes that you can serve in a large bowl, such as vegetable ratatouille or chilli con carne with lean mince that people can gather round and dip into with bread.
For an easy dessert, put chunks of fresh fruit - pineapple, melon, mango or kiwi - on skewers. Serve cold or grill them and salad recipes with pictures drizzle with honey and serve with a low-fat yoghurt. Or serve small glasses filled with yoghurt mixed with dried fruit such as cranberries, nuts, cinnamonhoney.
